Something Sweet - Topfennudeln

Athletes are constantly looking for simple, delicious treats. Not too calorie-dense, still somewhat nutrient-rich, yet a real delight. Here's one that is very easy to prepare, fits into the daily nutrition plan, and allows plenty of room for extra variations and experiments. It works well for breakfast, as a small afternoon snack, or as dessert!

Curd (Topfen) is a good, high-quality protein source made from milk. It is commonly used in both warm and cold dishes in Austria. It is especially prominent in traditional recipes, particularly in desserts. The beauty of curd is also that there are low-fat varieties available, making it easy to reduce the calorie content in the recipe.

Topfennudeln (Curd Pancakes)


4 Portionen

  • 250 g curd
  • 2 big eggs
  • 1 spoon salt
  • Zest of ½ organic lemon
  • ½ cup flour
  • cranberry jam


  1. Process all ingredients to form a dough.
  2. Shape small patties and fry them in butter/oil until golden brown.
  3. Serve with cranberries.Tip: Add vanilla extract, poppy seeds, nutmeg, or cinnamon to the dough for extra flavor."
